At 4:30 you say that e4 is bad on acount of Bxf4. I agree, however would it be possible for him to reverse the move order? So he could play Bxd6 and then after Qxd6 play e4. To me this seems better for white than the game. Please tell me if i am missing something.

Well, I'd play cxd6, not Qxd6.
Bxd6 cxd6 e4 Nbd7 would have been a reasonable continuation, yes.

why is black always about equalising? is it simply because white goes first and so has an advantage?

You're right. Equalizing in the opening is about overcoming the advantage created by White's first move.
