i believe tha air tries to pass around the paper and gets "crashing" itself and taking the paper out... isn't it?

no, the high speed of the air out of the bottle creates low pressure, thats why the paper goes out.

and yes the pressure in the bottle is higher.

wrong. The air moving over the paper, INTO the bottle is low pressure. All of the surrounding air is higher so the ball is pushed out.
