I just made this! Its amazing!! Its really simple and quick (other than the cutting open of the coconut, phew!)
I would definately recommend putting only 1 medjool date in first to see the sweetness and then adding more only if needed otherwise it might be a little sweet. Mine was slightly sweet, which i offset by adding a little more soy.
You really should try this!! I'm full of energy after this delicious and nutritious treat!
Now "that" looks worthy of making. I will omit the salt though, and use cummin. Interesting to see the skin of the ginger being used. Won't be peeling any longer. :) OH! Sooooo yummy. Thanks for posting.
if can find a Asian supermarket your set but for can coconut milk but it wouldn't be raw it a Thai coconut if i am not mistaken . Happy soup ! can or raw still delicious i guess if you start with the canned version you will have a better view of the coconut version HMMM interesting
I was waiting for him to take his fingers off!! holy crap, dude! there is a way easier way to do that. Cut the top off...that point and then all you have to do is find the soft spot and poke into it with a knife point, then just lift off the top. sounds simple? it is.

My mom uses fish sauce (which is annoying) and a former colleague of mines uses rice vinegar, which was used with the rice paper rolls with rolled rice noodles and orange peppers. It actually is similar! Funny how I mentioned rice a lots..hahah
There's a recipe to the sauce. I'm certain it's just not rice vinegar alone. I think it was with spices and bits of ginger in the rice vinegar.
Coconut milk should work OK, although it's good to have the coconut meat in there for texture. Coconuts are available in most major supermarkets by the way. The one featured in this segment is a Thai coconut.
Ah... that's a different method of opening a coconut from what I've used/seen.

They sell Thai coconuts at Whole Foods, but you should also be able to use canned coconut milk.
