The colours in the histogram show the RGB (Red, Green, Blue) breakdown of pixel values. Each pixel has a number 0-255 for each of these three colours (true for 8-bit). E.g. the Red histogram shows on the far left how many pixels have a value 0 for Red, the far right shows 255. When the histogram is high, there are more Red pixels with this value. The other colours work similarly.
The grey histogram is the same except it combines all the colour together. You can think of this as a B&W version.
