With the top round steak and a tenderizer will that make it less chewy and gritty? The toughness really turns me off from her chicken fried steak, but at some restaurants it's nice and easy to chew. Is this how they do it?

Bacon fat Rules! One thing I do is break up a garlic clove into 3 or four chunks and put them in the oil while it's heating. This not only infuses garlic flavor into the oil, but when the garlic browns and starts sizzling, I know it's hot enough for the steaks.

Just use whole milk mixed with fresh lemon juice. To 1 cup of milk add 1 Tbsp lemon juice and let sit at room temperature for 15 minutes, stir and it's ready to use.

Great recipe. Mine is similiar except i never thought to use sour cream-brilliant addition. However I use 2% milk. Is buttermilk a big difference? Think ill try it if u think it is.

Scott you have no idea how I appreciate this recipe. Eating out here in rural KS - CFS is always on the menu & it's usually nasty...heavy in salt & garlic powder..usually made with cube steaks that taste like knitted tough meat. Your recipe is excellent. Thks so much !

I noticed that your recipe has a lot more flavors that you add, so I can't wait to try them and see what they add to the meal. Yes-the pan drippings work just fine, but the bacon fat adds SO much flavor.
