@minefile In regards to the granita straining, unless you are going to make more than what has been shown to balance out what will be removed by the cheesecloth, I would drop the 20 dollars, since it can be used for other uses, e.g. sifter, etc. Hope that helps! ^_^

I don't own a fine mesh strainer and really don't feel like dropping $20 for one. Could I instead use a layer of cheesecloth and a colander or would the cheesecloth absorb too much?

I think it's because the tough stuff tends to be gross, so blending then straining tends to weed out gross flavors/textures.
