You also must be flattered by Angelina Jolie and how she made Cambodia popular and made white folks from all over the world wanting to go there? Whats it to you if Angelina Jolie adopted a kid that probably would have worked in a sweat operation otherwise or if Andrew Zimmerman endorses food from Cambodia. A lot of people are ignorant to the Cambodian culture or don't even know where Cambodia is so I am all for awareness. I'm not sure if you are familiar with that term.

His credentials are that he is a culinary chef and he is doing a recipe on his take of a Cambodian recipe. Not once in this video did he say this dish was bizarre only that it was Cambodian inspired. And here you are going on a rant about McDonalds food, etc for no reason. How many people know anything about Cambodian cuisine that aren't Asian? Nobody, hence "awareness".

The beef is sliced smaller and thinner, the marinated sauce is darker... And you know we only make this food, if its a cook out, parties, or special occassion...

  • try palm sugar instead of brown sugar, add some black ground pepper, you can also add some coconut milk (that's an option). The side dish pickled carrots and daikon radish is called Chua. yummy

  • I wouldn't recommend sticking the lemon grass in a blender because it beat it into a rough fibrous mush rather than grinding it like a mortar would. A Cuisinart works also, it slices it and then you can blend it. You can see how long and fibrous the lemongrass was in his recipe.

  • I suppose he made it like this coz the majority of fresh cambodian ingredients aren't readily available commercially, although I'm sure this recipe is just as tasty! Great effort!

  • @crystalclearwolf - continue -3tsp salt, 2tsp sugar, 2tsp honey, pinch MSG (optional), 1tsp finely minced fresh pinapple (optional). combine all ingredients with lemongrass paste. Marinade sliced meat overnight for best flavour. Engoy!

    3-4med sized stalks of lemongrass finely sliced, 6 leaves of Kaffir lime leaves finely sliced, 4 cloves fresh garlic, 2 tsp chopped galangal (optional)

    Either grind these ingredients together in a pestle and mortar into a paste or process in a coffee grinder. Transfer paste into a bowl, set aside.

  • Cambodian style? yes. Authentic? no. The marinade for this should be green in colour and heady in lemongrass and kaffir lime leaves. We also like to use cut that are not so tender eg; beef rib, and a tiny teaspoon of finely chopped pineapple will tenderise the meat. If you want the recipe let me know, I'd be glad to share it :o)

  • I think when Andrew says "This dish is from Cambodia" he is referring to the beef sticks because it is the main entree. It is a Cambodian style beef stick. Beef can be eaten with any sauce. I eat mine with A1 steak sauce when I don't have sauerkraut on hand. Thanks for the video. Love your show, Andrew!

  • Sorry, but I take this as an offence. Not only I’m living in Cambodia since long, I’m also a professional Chef. Maybe Cambodians in the US do, but it is not a part of their traditional food; peanut butter doesn’t come from Asia; even in Malaysia they don’t use peanut butter. Hoisin Sauce is from China, tomato paste from Europe. If you ever come to Cambodia walk through the local markets (not the Western style supermarkets) and look for peanut butter. You won’t find it.

    They don't use peanut butter but they do use raw peanuts. We use peanut with all kinds of food. We roast them and put them into our foods or even make sauces with them.

    Lime-pepper dip? Actually it would be sweet fish sauce dip.
