There are so many delicious things you can do with tomatillos! The way it is most commonly used in Mexico is to make "salsa verde" (green sauce) and my personal favorite is to serve it with breakfast. Make two fried eggs, put a generous serving of salsa verde on one and salsa roja (the same sauce you would use with huevos rancheros) on another one. These are called "huevos divorciados"--divorced eggs. serve with warm (corn!) tortillas, refried beans and cotija cheese! Yum!
