the name of the action is "conducting," and the stick you mentioned is called a "baton."

I don't want to interfered in your discussion, but I think it's not call a 'baton' but it's called a 'baguette'. A 'baguette' is a small stick (yes I know) to drive the music, or to eat chinese food, a 'baton' is a larger stick to knock on the face of someone you don't like (with moderation anyway, without moderation it's called a 'trique' or a 'matraque' but it's another story....)
