I've been looking for a real simple nacho cheese sauce with a good chilli kick. I love your recipe but unfortunatly, here in the UK I have not been able to get hold of that cheese you use, or anything similar. We don't do the American Cheese blocks over here. So, do you think I could use the processed cheese slices that we do have over here?
@iwh13 Yes, you may put one pot over another that fits well enough and put water in the bottom one. Or, you can use a single pot--just make sure that you use very low heat so that the cheese does not stick to the bottom and sides.
:( my nachos came out terrible i used a extra mild cheddar cheese and it came out lumpy i added milk and butter and it's lumpy every time i make "nachos" it comes out lumpy i am not using velveeta cheese ....
@yucravechina I'm sorry your nachos came out lumpy. Generally, if you heat the cheese an milk very slowly, stirring constantly, you will get a smooth result.
I am debating on going to EKU for my Masters degree. Ironic lol. I live about 50 minutes from Richmond and about 25 minutes from Cincy. Thanks for the response. I used this recipe last night and plan on using another from you tomorrow. :)
@unitedairforcepilot Rick and I think EKU is a great place to get a master's degree! We went to school there for our undergraduate degrees, and I got my master's degree there. Rick went to U of L for his law degree. I hope you come to Richmond!

@TheMissThis I like Velveeta (cheese spread), because it is so velvety when it is melted; however, if you want to make this recipe, you may use any cheese that you like. It just won't have quite the same texture.

I would love a recipe on the white cheese sauce that mexican restaurants use, I thought it was con queso dip but not so sure. Each time I have asked them they state that they use white american cheese as the base.
@stratosguy1 Sorry to butt in but, if you have a Walmart near you look over where the butter is. There is a section of white cheeses. Most Mexican restaurants use queso asadero. There is one brand in a white package, square with a disc cheese vacuum packed, with a flag and cow called La Chona. Asadero is what 90% of restaurants use so, as long as you get that you're good. Look in your phone book for Mexican stores if your Walmart doesn't carry it.

@hertot Try any of the soft plastic-style Kraft cheese if you're in the UK or Australia... you used to be able to buy Velveeta in Australia and the UK but now they only sell a similar type of melty cheese which is known as 'Kraft Cheddar Cheese' - the stuff in the block, not the slices.
