It's the vowel sounds that sound English. However, I'm not saying it's an English accent, as the singer is not English and I understand the pronounciation is meant to be a mediaeval French one. To English ears though is sounds like an English person singing a French song but with particularly good French pronounciation of the r sound.
The singer is Sabine Hornung of the German Medieval band Annwn. Douce Dame Jolie is taken from their first album called "Orbis Alia". They have just released another album called "Aeon" featuring more music from all over Europe. I incidentally found them on myspace: annwnmusic.
Quebecois maybe, with the rolling 'r'. And it sounds a bit over-pronounced, that's why I thought she was English (why else call it "The Lady and the Unicorn" and not "La Dame et la Licorne"?). Anyway, I love this accent, it's beautiful.
In the other video of this same version(medieval virelai music etc) the person who posted-ZekiSWE-wrote about performers: German musicians;nothing else is said
@MrEayes tfd75005 provided me with the answer eight months ago. The band is called "Annwn". And yes, we knew it was Guillaume de Machaut who wrote it.
The 6 tapestries which represent the "Dame à la licorne" ( "Lady with the unicorn" ) can be seen in Paris, in the National Museum of the Middle Age, the Museum of CLUNY,near the antic thermes (spa). They are very well conserved and very big. They are allegoria of the 5 senses.

e.g the pronounciation of "dieu" as "d'you" instead of "d'yur"

Why is it that nobody who posted this recording ever mentions the performer's name, nor the musicians' names, etc.?

Merci.
