  • It is important when you heat the oil not to overheat - not to get it too dark - because unhealthy toxics may build up - if you overheat.

  • The spring roll skin should not bubble like that. Looks a bit nasty. I like to use the tee yi jia spring roll pastry from singapore. The egg skin gives a great colour, and rarely breaks apart during frying.

    Also who has the time to fry 2 spring rolls at the time?! LOL. I can easily mange 5 rolls at a time with a wok, and more with a deep fryer.

  • Actually he used "rice paper" not spring roll skins. When you use rice paper, it will puff up or bubble during the frying process. It's very crunchy when you use the rice paper, but also very greasy.

    I prefer using regular spring roll skins, it's less oily and most time will not break while frying.  Also, I do love the golden brown color.

    To those who are curious about what type of oil...just use regular vegetable oil or any oil that is neutral in odor and taste.

  • I use olive oil mainly for safety reasons. I find the oil "shooting" is less with olive oil when the temperature gets high.

  • The skin that bubbles like that tells you where it orginates. Vietnamese springrolls/eggrolls uses rice paper and not the flour based wrappers like everyone is accustomed to seeing. It is more cost effective to use the flour based ones compared to the rice paper.

  • I tried doing this a week ago and found after the frying the rolls returned to being soft, and I'm just not a fan of the rice paper like that. Wish I knew what type of oil this was!

  • make sure your oil is hot . the spring rolls should sizzle when you put it in the oil. and also, make sure the spring roll isn't too wet b/c it'll splatter and oil will be all over the place.

    whenever i make "spring rolls" i don't fry them. w/egg rolls i do. the mixture in this video is good if you fry egg rolls w/egg roll wrappers. spring rolls should be made w/fresh lettuce, cooked meat balls, shrimp, cilantro, and noodles (the kind you have to boil), normally eaten w/curry.

  • I tried to do it this way, and they turned out horrible. They fell apart and were way too big. After the first batch, I changed the size and found out that they are much better when less meat was used and they are rolled much, much tighter.

  • i just wonder what did you do with the rolling paper because it is very thick and dry, not quite the same as in Vietnam. I usually have to "wash" it through "hot water" to make it wet and then roll.
