  • @1973psn : The microwave tends to heat in spots and it is not very even cooking - if you don't have a choice, we suggest you cook on a lower power and keep stirring...

    i made it today it turned it good but one issue is when we eat it ,little raw flavour of the cashew is coming and small graunles of the milk powder is shown on the burfi

    can u tell me what happened

  • @gsupraja : Next time try cooking the Cashew Powder just a bit, remove and then proceed with the recipe. If the milk powder granules were being seen, it probably not heated enough and did not mix in well into the dough. Hope that helps :)

  • @veenu1404 , It is silver foil, but I would suggest you don't use it as you don't get genuine foils and they are beaten on leather (though I heard some are made through machines.... but no sources to confirm that) , in all it is not healthy at all , but if you want you can source it from India, try to find Jain Silver Foil,

    We have only tried this recipe with raw cashews but roasted will probably work as well. The taste may be slightly different. We buy raw cashews from our local Indian grocery store, but other stores like Sprouts or Whole Foods may also carry it.

  • @naima64 : We really don't know which stores carry it - but think that if you go to the bigger grocery stores, they will have it. Another good brand is Nestle.

  • @loisir84 : Try heating it a little more and kneading a little longer...that helps release the oils and helps soften the dough. Hope that helps.

  • Also, the final texture was slightly chewy and was not the same as the texture of a store bought burfi. I was curious to understand why so. Infact at the end of it I noticed that the little bit of leftover dough had actually hardened in the bowl (more like candy-hardened).

  • Your dough appears decently dry and manageable but my dough let a lot of oil out ...atleast 2 table spoons. Infact there was so much oil oozing out that I did not need any extra touch of oil to roll it out. Even after it was set, there was so much oil at the bottom of the dish. Do you know why?

    I could not find non fat dry milk, so I ended up using instant dry Whole milk (the Nestle Nido brand). Do you think that would make that much of a difference?

    We have not tried it with regular sugar, but powdered (confectioner's) sugar has added corn starch to it so the texture you get may be different than powdering the sugar yourself at home.

  • i like most of your recipe and tried many. It turned out great. Just a quick note to others asking about silver Varak. I prefer not to use those foils.

    (Just a word of caution, it is used for decoration only and not required.

    It is silver metal which is kept between animal skin and beaten. The foil may contain animal skin and sometimes it is not even silver. )

  • Yes, the powdered sugar we use is sometimes called icing sugar. It is different than regular sugar that has been ground. Powdered (or Icing) sugar has corn starch mixed in it.

  • It's called Varak. It is real silver that has been pounded down to extremely thin sheets. Some Indian grocery stores may carry it. We got our's from India.

  • You can powder cashews in a coffee grinder. For this recipe, you need raw cashews.

  • Castor sugar is superfine sugar - used when you need sugar to dissolve quickly. Powdered sugar has a texture that is even more fine than castor sugar plus it has corn starch mixed in. In this recipe, powdered sugar is needed to get the correct texture for the burfi.

  • We got our "Varak" - edible silver foil, from India. You may be able to find it in larger Indian grocery stores or sweet shops. If you can't find it, you can leave it out. It does nothing as far as the taste is concerned and used only for ornamental purposes.

  • after watching ya video tried making this dessert with less amounts of ingredients as i didn't want to throw away loads of stuff incase it went bad. only problem is when i started mixing the dough with hand after awhile the oil from cashews separated from the mixture and it turned really weird :( and i had to throw it away... can you tell me what went wrong so that i'll avoid it next time...

  • Sorry, your kaju katli did not come out well. The only thing we can think of is the proportions were not right...the kaju was too much for the rest of the ingredients. To recify that, you can add in a little more milk powder and be sure not to over cook the sugar and the milk powder mixture.

  • Hi I am from India. I used Amul milk powder and powdered sugar. I added very little water only. But i could not knead the mix to a smooth dough as you had prepared. It became a very sticky coarse mix. Neither could I roll it out into a roti as it was shown in the video. Please let me know where I could have gone wrong.

  • Instant non-fat dry milk is milk powder. We wrote exactly what was written on the box to make it easier for people to find it in the grocery store. The varak or silver foil may be available in some Indian grocery stores or sweet shops. Otherwise, you can get it in India.

  • Black & Decker Pro II is a good food processor for dough/chopping. For dosa, the Cuisinart CBT-500 works well ($99).

  • You have to use the dry powder. This recipe takes very little liquid to form the dough so if you use the canned milk, it will be far to wet.
