The noodle has no water moisture left, thats why you can light it up, If you boil it you the noodle will fall apart, the only way to cook these kind of thin noodle is to fry it up

@deduzz japan and korea does handpulled noodle too and some part of Asia. They don't use rice flour cuz it's not flexible enough to be pulled like the one on this video.
@deduzz 1) Your Comment is wrong, alot of chinese use wheat flour for this process.
2) The dough is made of a consistency so that it can be streched over time to become really elasticated, propbably about 1 cup to every 2 cups of flour.
3) You dont need to be a master, this is what we asians eat, rice and noodles as our staple food, u just need to not be a retard.
4) You dont have to do it that fast, the guy in the vid did it real slow, and of course you have to do it right, donut.

the flour needs the be made from RICE only
but the dough itself i dunno know the recipe
AND in order to do what he does... u need to be a MASTER O_o
u need to do it FAST and RIGHT cuz the noodles will STICK BACK TOGETHER
and when ur done u need to cook it right away or it will lose their amazing taste
u only find this in china btw
no other asians knows how to make it :S
