@tsalas41 : Thanks for you comment. I cook the beans the whole day so the onion gets very soft. Afterwards, I just remove and toss onion; or mash into the beans. There's no set reason. There have been times when I cut a little finer and let the onions melt into the beans, but in general, I just leave whole so it's less work up front.
