You can make Aloo Gobhi or Sitaphal (known as kaddu or petha) and it goes pretty well with poories. You can also try Fried Arbi with poori. I recently made it and everybody liked it.
I only have the video for aloo Gobhi at this point. But the written recipes for all the above are available at inHouseRecipes website.
