  • Mine came out great. I added a little too much liquid so added a couple of extra tablespoons of flour at about 1 1/2 hrs, then also did the butter thing and the consistency was perfect. I wasn't sure about the shrooms so I also added potatoes. thanks. will try a few other recipes

  • This is not stew. Stew is thick. This is really runny and more like soup.

  • Fantastic, Heather! This recipe inspired my own beef stew. I made some minor adjustments with what was already on hand. I used Marsala wine and potatoes and green peppers instead of mushrooms and peas. The butter/flour paste worked like a charm. Again, thank you!

  • @exussupremebeing yeah something about the look and texture was not right. It seems that all the flour sort of clouded the sauce. There really is no shortcut for a proper beef stew.

  • not a bad way to make beef stew, a mixture of butter and flour in a 1 to 1 ratio is called a roux by the way. Much better with baby onions and a good splash of Lee and Perrins Worcestershire sauce.

  • when i cook for my family i usally add beer instead of wine and prefer red onions to white onions,english or french mustard rubbed into the beef is good and tastes great

  • i'd skip the mashing potatoes and just quarter and throw them into the stew 25 mins prior to serving, makes the whole thing feel much more like something you can CHOMP on.

  • u should not cook vegetables for more than 15min, you will lose the nutricients, once glazed remove them from the pot, just cook the beef alone until tender, and lastly add the vegetables.. anyway, its up to u to have only tasty meal or tasty healthy meal ..

    But you ought to consider using the THREE HOUR recipe, that way, during the extra one hour waiting time while the stew is cooking, you and I could head on over to the couch and GET IN THE MOOD, and make our OWN beef stew.

  • Thanks for the vid. Beef stew never impressed me until a chef I know cooked for me using his way. He used ossobuco, beef stock, 3-wine sauce (shiraz,pinot noir, and port), fresh veggies (the ones that use to make a stock), mountain mushrooms, and fresh thyme. no salt added.. The side dish was chateu potatoes with a bit of sea salt and white-truffle oil.

    That meal was rich, tasty & heavy. I had it for the first time and I can still feel the taste.

    Your beef stew looks new to me, i think i'll try.

  • The safe temperature for beef is 140 - two hours of cooking definitely brings up the temperature well past that.

  • Why add good wine into the stew? Surely its overkill as the goodness of the wine goes through the cooking process?

  • Good point. Bad flavors in the glass translate to bad flavors in the plate, even with the cooking process. The rule of thumb is don't cook with anything you wouldn't drink. A good wine may not be necessary, but a decent one is. Thanks, hj
