I think the reason why Vincent stood quiet while Catherine was talking was because to him, he knew he couldn't exactly decide between the two women. Obviously, Catherine was his exact preference but Katherine has always been there for him.

Vincent doesn't know the limits when it comes to conversations so he didn't know how to word his reply to Katherine. At that moment, Katherine believed he was being selfish.
