The food stylist makes the food look good by "styling it", sometimes in ways that are non edible (like using oil instead of a sauce/gravy because it looks better for the camera or the viscosity looks more appetizing than real gravy). A food stylist will arrange french fries just so, will put individual sesame seeds on the perfect bread bun that has been selected from a batch of 100, etc.
