@Angelinasmonkey Err. nope. The 'c' in Italian is never pronounced as 's' or 'sh'. If the 'c' is before 'e' or 'i' then it is pronounced 'ch'. With any other vowel it would be pronounced with a hard sound 'k' like in cat. So in this case, it would be pronounced 'Pan-Cheta'

@lintonpair Hey there, this soaked it a water, salt and cure brine in the fridge and I used a belly cut basically its a large slab of bacon.
