I think you're hearing the electric motor and all those gears on the left - I'm guessing that if something rolls like a bearing, it had better be quiet like a bearing too!
It's a NuVinci Continuously Variable Transmission(CVT). Notice how, initially, the Red disc is spinning faster than the Blue disc ( 0:02 ). As the person makes the adjustment the Red disc progressively becomes slower as compared to the Blue disc ( 0:28 ).
ok, since I posted this video I feel like I need to explain the fluid matter! It's a different story if you only have to make a ring turn with no resistance involved, or if you are planning on turning a whole wheel with it with the resistance of an uphil journey! So the Desktop Unit works without the fluid, purely because there is no ( or hardly any ) torque involved.
air itself is a fluid, and enough to provide some traction under high pressure. My guess is this showcase setup was machined a little differently to work fine without the high-density fluid. Am I giving them the benefit of the doubt? Yes, but it is very reasonable.

its designed for bikes... soo not much.
AKAIK nobody has tried it on an e-bike application as of yet.
