I couldn't agree with you more about bacon. I always tell the wait person that I want the bacon cooked so that if I drop it on the floor it will shatter. One of my hot buttons is when they cook the bacon just right and then put it on top of the pancakes or French toast and the bacon gets rubbery from the steam.
