Line the bottom of a baking pan with the stuffing. Cut the spine out of the chicken, open like a book, season, and put meat-side down on top of the stuffing.
The drippings still flavor the stuffing, but because there's more surface area (instead of being a big block), the whole thing cooks more quickly, and evenly!!
Also, if your family consists of a bunch of crispy skin nuts (like mine does), the only other way to attain total crispage is by flipping half way through, which is WAY more of a pain in the ass, and is less effective over-all.

I never worry about illness from stuffing
My family doesn't even cook stuffing in the bird anymore. just in a regular baking or casserole dish
