Pulled a good vacuum with this setup to seal them. They are so good to eat like this. I have tomatoes, squash, peas, greens, and green beans. I put these veggies up around September. I was told they should last a year or two. They are so good no way will I not eat them all up before the next garden season. You should try this.

I use a real vacuum pump like what air conditioning service use. It will boil water. I can suck water out of honey. mine would suck your glove up until it reached the lid. btw a vacuum has NO pressure. It is the absence of pressure. The sealing is from the air trying to get in the jar & not a vacuum pulling the lid closed.

Also, you could take a compressor out of a refrigerator. getting the plumbing parts to adapt to the tubing was tricky I I used some plastic pieces, but it works like a champ. I put an ad for canning jars on craigslist and was given 75 wide mouth quart jars. I would have paid money but I said thank you a lot instead.
To keep from bending the tops when opening them I put a tiny hole in it then cover the pinhole with Scotch tape. Pull the vacuum the same as always Pull the tape and the vacuum is broken and the lid comes right off.

Now if you blanch the vegetables in boiling water then run them through a dehydrator, you can store them that way for a year or two, easy.

No mega corporations from india or Saudi arabia can buy them out. The prices are good and the employees seem to care about the place since they own it. Wish we had more businesses like that.
Do NOT put the rings back on! The rings will hold moisture (humidity) and cause rust. Just write the date/contents on the lid, as they are NOT re-usable. Sticky notes can get knocked off, and "real" lables are horrible to wash off when re-using the jar.

Excellent idea about the labels. I'll label the lids as you said. I don't know about the rings holding moisture when I'm just vacuum sealing the jars. If there were canned goods and I put the ring on wet I can see your point. Of course you're more experienced than I am so I may be wrong.

It had a big crack in it. Apparently the wider containers tend to crack while the narrow ones are more durable. I ordered a narrow one and will see how it works out.
I moved a lot of my dry goods into vacuum packed mason jars. In a month or so I'll go through them and check the seals
I read that too, I use a battery powered 'Vacu-seal' that was meant for some companies proprietary bags, It works great on the canisters without too much stress on them and you don't have to plug in the foodsaver every time you need to reseal them. I have used it for several months so far.
Awesome! I'd like to see that canning potatoes video. I liked your trail mix vid as well. I have a bunch of over ripe bananas that I'd like to make banana chips out of. My new dehydrator arrived a few weeks ago but I haven't gotten around to unpacking it and reading the directions. I'd better get with it or those bananas will be too ripe even for banana chips.

I've gone through a few of those Food Savers over the years. We put up a lot of halibut and salmon and garden stuff with them up in Alaska. Found out that wet items can really stress the vacuum pump motor - but it sure greatly increases the length of time you can keep fish & meat in the freezer.
We also had the vacuum canisters - which we didn't seem to use very much, plus the jar sealer attachment. It did quite well sealing dry goods in jars - we used it more than the canisters.
I bought the food saver brand. I had no imagination and didn't shop around. I probably paid too much but I can't remember now and that was before I started keeping records.
