Great video for bearnaise proper (tarragon goes in the reduction as well as in the end PROPER).
I tried maybe 8 times before I understood that butter doesn't have to be boiling hot when it goes in. Also you explain how to thin it as most people end up with too thick a sauce.
In my opinion, his is by far the best bernaise sauce video available. I have checked many of them and this one goes through all the pitfalls you might get into. Many thanks.
