@tottovicke you click on your sim you want to make them pose and theres varies poses. (if you want everyone to pose at once: pause the game and pose them, then get your camera on them and un-pause)

how do u do the model poses, and how do u add the camera guy and he camera

well if you have universty you can type: Ctrl+Shift+C and then in the box you type: unlockallcareerrewards or unlockcareerrewards i dont remember. then go to your career rewards and get the camra.
