    Wow,English says Bonito? This type of Bonito says Katsuobushi in Japanese.

    if you have an asian market anywhere theyll have it, a lot of the time the bonito comes preshaved.

  • @lsutiger9904 You'll need to find a specialist Asian food store. I'm lucky as I live close to a asian food wholesaler that allot of takeaway owners use. If you find one, you may struggle to find banito blocks like the woman in the video uses, you may only find banito flakes. However, they are near enough as good.

  • @lsutiger9904 sadly i had the same problem you can find it in a big city at an oriental store but I just ended up buying dried shaved bonito flakes, they sell them on amazon!

    I believe the ingredient other than Miso is totally flexible. The best thing is seasonable and locally-produced vegetable. Meat or fish in large quantity might better be avoided, since it may kill the flavor of Dashi.

  • I tried the miso soup in Vancouver, and I hated it.... years later, I got it served in Tokyo, had to eat it....... LOVED IT!!!!!

  • Just bought all the ingredients today, took me forever to find them all... Ended up finding a loval Fairways market that literally had all of the ingredients I needed.

    Cost me about 15$ The wakame and paste I will ge tons out of, the only thing that you run out of the most is the bonito flakes, they were around 2.50. Making it for lunch cant wait!

  • i had miso soup for the first time yesterday and I didn't like it. It was very very salty.

    Is it suppose to be that way. I'm guessing they just didn't make it right.

  • i don't use thos leaves. i add green onion, drops of soybean sauce and rice vinegar. i don't know if it's right.... but i love the result. i kind of imitated the miso soup the make at makoto sushi bar.

  • @SEHANO ok. here in peru we get everything in chinatown. hondashi or bonito stock comes prepared. i put hondashi on hot water, then the miso like they showed. then kelp, but i don't strain it. i use the kelp as vegetable. we eat it. then some shiitake or mushrooms, leaves of any kind actually, japanese or chinese. at the end i add the tofu, soybean sauce (any kind again, just watch the salt) and rice vinegar (the sour twist, you know). eat it fast, it's at it best when hot.

  • you can throw all of the ingredients at once.

    I think without wakame&kombu make it easier to cook(but don't scoop bonito).and the way still has a very good taste as a miso-soop. or use dashi-powders

  • I bought an imported miso from Japan named" Bonito Earth", in this version the miso paste is flavored with, namely, Banito and dried Kombu. It's convenient if you don't want to make stock.

  • Miso soup is probably one of the few soups I can stand drinking/eating.

    I got scared when I first made it because I'm cautious of trying something new. I'm a bit of an illogical food-poisoning phobe after this one incident that happened a few years ago. But I don't think you can get sick from this stuff even if you don't cook it so perfectly. It's high in Vitamin K and Tryptophan. Really good stuff. Adding vegetables? Even better.

  • i have trouble getting dashi so i usually just use chicken broth instead. its still very good but not 100% authentic.

  • dashi is just a broth maid from boiled sea weed or sea weed paper. Look in the asian foods isle for sea weed paper used for sushi wrappers. Just boil down one sheet in a liter of water and you've got a perfect dashi. (I found mine in super walmart, lol)

  • True. Dashi is by definition a broth made from dried kelp and dried fish shavings.

  • The "seaweed paper" you wrap sushi with is called "nori". The seaweed sheets you use to make dashi is called "kombu". The shredded dried seaweed you add to miso soup is called "wakame". They have different flavors, so you shouldn't try to make dashi with anything but kombu.

    You can also buy instant dashi powder or condensed dashi, or miso with instant dashi mixed in. Even in Japan, most people now use instant dashi rather than making their own from kombu and katsuobushi.

  • I couldn't agree more. Noticed most of videos here adding lack of dashi part which makes miso soup tastes rich and not flat. You can get dashi in a bottle that's ready to use also.
