You need to consider if you want to do any off roading. The bike is heavy and tall. You saw how easy it was to get stuck from the video! If I did that trip again I would take a DRZ650 or KLR 650 - even those would be on the heavy side for getting out of mud alone... but hey... you haven't had an adventure if you haven't got stuck!
THese bikes are great for fuel and for cruising. UK gallon = 4.45 Litres and it would do 50+ most of the time (obviously less for alot of town riding but not lower than low 40s).
It sits very comfortabley at 100kph. It is not fast but good torque.
I did't use it with a passenger much but I wouldn't expect any real issues. The passenger rear legs may rest on the top of the side boxes. CHeck this for comfort before buying. Cheers
