What a low class chef. I know where not to go in France.
I can hardly beleive a chef using that method, considering the lots of kitchen utensils existing.
There are small and economic kitchen scales. Just leave a recipient/container, tare scale and with a spoon spill some salt and you'll get the right weight.
Another method is to weight a spoon of salt. With this value we'll know if we need to use 3 spoons (measures), half measure, or just a tip of salt.

Vaya un chef con poca clase. Ya se a que restaurante no debo ir.
Parece mentira que un chef, con la cantidad de utensilios que exisnten en la cocina, use este metodo.
Hay balanzas de cocina muy pequeñas y económicas (las hay por 5 euros). Dejamos un recipiente encima, y ponemos la balanza a cero.
Con una cucharilla vamos echando sal poco a poco y la balanza nos da el peso exacto.
También podemos pesar lo que cabe en la cuchara y sabremos si necesitamos 3 cucharadas, media o solo la punta.
