The steaks looked too good to make into a sub. I love it that you didn't wast the cast iron goodies and sauteed the veggies in them. I make a pretty mean steak sauce with those cast iron goodies myself. Great recipe!! I"ll try it someday soon. I make a standard cheese steak myself. I thin slice steak with my old hand cranked meat slicer and fry it up with onions in a cast iron. I kind of do it the traditional way, if you know what I mean. I'm more of a provolone guy , but the wife does the wiz.

In Phila and well as South Jersey, a sandwich isn't a sandwich without a crusty roll.Sarcone, DeLuxe, Del Buonos, and Amoroso bakeries produce the rolls for 90% of all cheeseateaks made in and around Phila. Anything else is just a sandwich.
Oh yea! now that's a cheese steak! YUMMY! Have never used tenderloins for mine but will try it for sure. used flat iron grills to do ribeye steaks and that is the only way to do it, cast iron rocks!
