    Some of us aren't lucky enough to have an electric ice cream maker. Mine is a hand crank and it still makes a mighty nice sorbet.

  • @ronnyrizat Why are people always complaining about sugar in ice cream recipes? Are you surprised that sugar is a main ingredient in ice cream?

  • @ChallengeDK of course im not surprised, i just thought that it used a substantial amount more than necessary thats all.

  • @ronnyrizat Well, Alton himself gives the reason as to why the amount of sugar is used - water crystal formation and thus the texture and softness of the ice cream.

  • @ronnyrizat When AB gives us the 15%-30-% 'range' of what will work, he actually gives use the keys to the ice cream kingdom.

    in theory one could Halve the sugar in the Ice cream or double the sugar in the granita and pick the balance of sweetness and texture that suits the individual.

    I think that, rather than the specific recipes, this ep was about giving the viewer the tools to create ones own recipe.

  • wait...I am a bit confused... he says you want a 30% solution by weight. that means for 1 litre of water (1000gram) you need 300grams of sugar. however 16oz of water to 7oz of sugar are 455grams of water to 200grams of sugar which is more than 45% sugar solution... am I missing something????

  • well roughly 30%, it's not exact, so you will probably come out with several different numbers

  • Your using faulty math. It's not a ratio at least not in sugar to water. The two ingredients together comes out to 23oz total. 7/23 comes out to roughly .3 or 30%.

  • Actually, it is a well known fact: dark chocolate is better than milk chocolate and white chocolate is just awful(jk). Seriously though, wikipedia is not a credible source for anything.

  • I agree completely but that's because i think dark chocolate is the only chocolate with actual flavor because it actually has a large content of cocoa solids. Milk chocolate tastes almost like pure sugar and white chocolate isn't even chocolate. Of course i feel the same way about green vegetables: the darker the better. And coffee. Darkness is normally an indicator of rich flavor. And that's good eats.

  • Really? Same here! But I have a bit of a sweet tooth so I prefer milk chocolate of dark chocolate (I'm not a big fan of the bitter taste,) but the darker the vegetables are, the more flavor they tend to have. Have you ever tried eating peas from a pea pod raw? They're actually really sweet!

  • Peas from the pod is the only way to do it if you ask me. Snow peas especially.
