  • I just read that Good Eats will end this year. Alton will make a few 1 hour episode but this is the end of the series. I remember seeing this episode and wondering who is this guy. Thank you for the education and the laughs Alton, Shirley, Deb and everyone else involved with the show.

  • @Zarthga That's great! Never hurts to learn how to take care of yourself. It'll save you a ton of money in the long run and you'll be happier than if you had to eat ramen noodles and hot dogs all the time.

  • Some shows take a good long time to find their voice and find an audience. Good Eats, on the other hand, was off and running from Episode One. It shows that Alton really put a lot of thought into his show concept from the earliest planning stage.

  • Alton is number 1, but, he would achieve mastery if he could tell us how to turn flank into butter like the Mexican restaurants do in the South West. Boot leather to butter.

  • For those who don't have a cast iron skillet, I found that a ceramic baking dish provided excellent results. Sear it in a regular pan first, then put it in the baking dish with olive oil.

  • its so different from how the show is now. he doesnt present the information himself back then than as he does now. its mostly interviews and less cooking.

  • @johnnyrocketfingers3 Mainly because the first produced episodes of Good Eats was meant for PBS and not Food Network. PBS passed on the project, but Food Network bought it, and the rest is history.

  • Although this is currently my favorite cooking show. Its not the all time best. In the 80's we had cajun Justin Wilson, Frugal Gourmet Jeff Smith and Galloping Gourmet Graham Kerr. All 3 of these guys were not only great cooks. They were also very entertaining to watch. Also, a little shout out for Martin Yan.

  • So I'm a newby to cooking and especially to cast iron... I tried this steak out, and - moron that I am - assumed I would need to put peanut oil in the pan in addition to what's on the steak. Smoked up my entire apartment before I could sear it for 30 secs on each side and put it in the oven... where it continued to smoke for some time... As a chemist, should have known better than to heat the oil above its smoke point. That said, this was STILL the BEST steak I've ever had - Alton is awesome!!

  • Yea you will still create a BUNCH of smoke, something I wish Alton would have brought up in the episode.

    But yes, the smoke is worth it and as long as you leave the windows open (and FANS on!) it will clear out within 30 minutes.

  • That was on a "mythbusters"-type episode. He discovered that it did not hold in moisture but that it still added significant flavor.

  • He said searing is important, but not for sealing in juices, because if it sealed in juices, it would also seal out juices.

  • I believe it is the "Myth Smashers" episode where he does the seared vs. non-seared comparision.

  • The seared steak lost a higher percentage of weight due to the juices in the surface tissues getting cooked out at high heat.

    But the high heat seared browned crust tastes a whole lot better than the lower heat "steamed" beef.

  • This is one of my all-time favorite episodes, and, around my family at least, the recipe for pan-seared ribeye has become one of my specialty dishes. Alas, I haven't been able to make one in a while...then again, I don't have a working oven or range.

  • Also, love the superlong steadycam shot in the supermarket. Very cinematic, ahead of it's time. You see stuff like that in artsy farsty modern movies like "Children of Men"

  • The Production Quality is pretty high for a pilot but you can tell this was their first show because of all the jump cuts. Cuts from talking to hand shake infront of drawing, cut from scary market to butchers line to backroom with no transition. It's not really a glaring error but it weakens the production's value somewhat. In more modern episodes they'de do a pan or a smaller cut in the same location, introduce the butcher, talk about steak then say "lets go into the back room" and then go.
