It's a pretty cool song but I disagree with the main lyric.

Love is subjective and varies massively from one person to the next... Many many books have been written about the meaning of the word and the spectrum of desires and actions that it encapsulates.

It can only seem simple when one avoids attempting to understand it.. but that definitely doesn't make it simple.

I think you are maybe confusing the words "simple" and "indescribable." I'm pretty sure the lyrics are referencing a less literal "simple." I think he means the concept of love is simple. I agree. Any attempt to define it by any word other than "love" would prove to be futile. The experience of love isn't the word "love." The actual experience of it is not a complicated thing, though... There is a lot more to the concept of love than an individual's experience.
