  • @84gail84 It needs to be a cream with a high fat content (usually at least 30%)

  • @ramyaiyer07 I Googled ("Pantry Cream" Japan) and found a forum in which it is stated that this stuff labelled Pantry Cream is 30% fat. Whipping cream is typically 35% fat, so it's almost but not quite whipping cream.

    these are absolutely delicious ! The texture is so soft and melts in your mouth ! Next time, however, I think I'll use 150 ml of condensed milk and 150 ml of cream instead of all cream as I did just now; I find them a little bit on the chocolaty side and they are a bit soft. How long can I keep them in the fridge? I'd like to serve them for new year's eve, do I need to keep them in the freezer until then?

  • Dear Titli, I would love to make these balls, but I would like to add something to the ganache to make it more 'fudgy/crumbly' in texture, and I'm thinking of ground almonds. But would this work, and do I need more cream (to make the mixture less stiff) or less cream (because nuts are fatty too)?

    Any tips would be appreciated...

    Strange, I feel the need for thunderstorms, wild cackling and shouts of "It's alive!" bubbling up inside me. Think I will have a quiet lie-down before making these delicious truffles.

  • I made them with ginger!

  • I tried it with dark chocolate and it worked really well, the other batch I made was with white chocolate, but I guess white chocolate contain too much fat themselves for the ganache to harden properly. so I filled the custard-like thing I got into aluminium foil chocolate wrapping thingys (the ones that look like little muffin thingys). You can eat it straight out of there, tastes lovely!

  • Dearest Titli,

    it didn't work :( The ganache didn't set.

    I used 300gr of milk-chocolate with 150ml of cream and mixed in some mushed bananas (chocolate and bananas - YUM!) and 300gr of plain white chocolate with also 150ml of cream.

    I heated the cream gently, as it came to the boil, I poured it over the chocolate. I stirred it well, put in the fridge to set. 4 hours later I checked the 2 ganaches. they have the consitency of ... cake-icing, not hard enough to form it.

    What did I do wrong? :(

  • @SadisticCupid Did you use chips or chocolate bar? And what brand of chocolate did you use?

    You should still be able to rescue these by adding more chocolate (melt ganache gently!)

    I used simple milk chocolate and simple white chocolate, both crushed to little bits. I believe it's the fault of the cream. Because your recipe asks for double cream, but I used "regular cream" (can't get double cream in Germany).

  • Once added the different coatings on the truffles can you add them directly into the small cases, less washing up :) Or do they need to cool down from handling again?

  • @BlackWolf4830 No. There is more fat in milk chocolate so you need to add less fat to make it soft.

  • You can stop them splitting by using egg yolks, about 2 or 3 for the amount you have there.

    You can also help the texture by allowing the cream to cool ever so slightly before throwing it over the chocolate, if it is boiling it can make the chocolate quite grainy afterwards.

    Also, if you want the truffles to keep longer, or have less of a chance of melting, an very thin layer of chocolate over the truffles before you put on the toppings does an amazing job.
