This one isn't waterproof (it's a prototype, normally you don't use that much cables and another housing), but you can make it waterproof if you like, i recommend to make it waterproof, you can do that with waterproof connectors or just stick the cables (than you can easily seal it with glue) out of it with the connectors attached to it.

Yes you can make it a lot more easier, but this is a concept witch is also with a part that you can keep on your bike that is also the switch between your normal light and the bikecharger.

you can just get a dynamo

a 5v reglator circuit

and your phone cable

and it you want to switch between light and charger make a cable coming from the dynamo and hook it up to the light and put a switch on it

and switch the cable from the dynamo going to the phone
