Perhaps 4babtong has a point... but - I believe this is just the beginning of a new way of cooking. I'd lean more toward commending these pioneers, rather than knocking them down for their primitive, albeit brave and difficult venture toward a new art form. Just sayin..
for me personally, I think molecular gastronomy should be a way to enhance food, not for the sake of just doing so. This honestly is trying little too hard. you see gold leaf here, sodium alginate used there, ridiculous plates there, foamer, dehydrated yellow stuff. I mean all in all, if the flavors are all there im fine, but this looks alot like pretentious gastronomy for the sake of being pretentious

whats with the plastic tube and ice bath?? when ive done "spaghetti" i just squirted the alginate/fruit juice into the calcium chloride bath in a continuous flow and it made a noodle just fine. are u not usinge calcium chloride?
