  • Wow...just tried this recipe this evening & its delicious! Never knew spinach can be this good.

    I really think its the process of quick boiling, shocking in cold water then wringing water out makes the spinach able to soak up the flavor of the seasoning = Wow taste.

  • This is very good, while similar as Chinese salad too, while we will add some green bean noodle , soaked and boiled mix within it, better help stress relief. :) In summer time. :)

  • I was kind of horrified to see you cook it without washing it. I was somewhat relieved you gave it a good rinse after but i can't help but think that it is much harder to get the dirt off once it is cooked since the leaves are all wilted. Do you not find raw garlic a bit strong? Why not fry the garlic in the sesame oil briefly to release the aroma?

  • To whoever said that spinach growers need to get the sand off of their spinach, that's not their responsibility. You need to wash it well after purchasing it just as you would leeks to get all of the mud out.

  • There are spinach you buy at supermarket come with lots of SAND!!! Make sure you rise them off before you boil them in a pot! Spinach growers. make sure you take the sand off before supplying them to supermarkets.

  • Yes, I remember the process from job chae. I've been cooking job chae for a while now, thanks to you. 

    I do my spinach a bit different. I thoroughly wash it by filling the sink with cold water until the spinach floats freely. I then toss them around vigorously to remove any soil residue. After squeezing, nuke for 2 mins. on high. It comes out just wilted enough. (At this point, it easily stores in the ref/freezer for a Spanish torta besides job chae or Korean pancakes.

  • which soy sauce do you use?...you know...the chinese one, the japanese one, the kikkoman....or do you use Ganjang?

  • @mrlolalo I like sempio jinganjang made in Korea. Check the photo of the soy sauce I use in the ingredients section on my website.

  • @Maangchi Is there a difference in the different soy sauces? I know the difference between light and dark soy sauce but not Chinese, Japanese or Korean. My mother uses Kikkoman.

  • hi you are really a great cook. you inspire me to eat healthy & more than that you show us that cooking healthy is not that difficult. i have a question i watch lot of korean dramas in that they show lots & lots of side dishes served in small plates or bowls. do you really serve your family every meal like that in real life. if so what about cleaning dishes 3 times daily. how about if you are working mom. i'm realy curious.can you tell me secret.

  • When I tried this recipe I found the dish was a little salty. I don't think I added too much soy sauce, should I add more sugar to balance out the flavor? I then ended up using her tofu sauce recipe instead for this, and I thought it worked better. Other than that I love her recipes! I make her egg dish every day!

  • I love spinach panchan in Korea. Now I learned how to cook it this way thanks to your video. I'm surprised that you're surprised to see people eating raw spinach. It has a lot of Iron so is actually better for our health raw then cooked. In my country we eat it in salad with olive oil and lemon but also boiled as a sauce with tomato, onions, beef and corn polenta. Anyway good vid.

  • beacuse spinich is grown in sand and is quite dirty...it just to make it as clean as possible...

Somehow I've always thought that it is too much work to make it. cause I cut the top part one by one and wash it atleast 3 times before boil it and then rinse again......My daughter loves this dish but I didn't make it for that reason, I'll try to make it by your way today...thank you so much^^

  • yes, it's ok to use baby spinach, too. I sometimes use it for sigeumchi namul.

    i have a basic question for you.

    since i hardly use spinach in cooking (that will change now, you make it look so esay :). i notice that spinach is not washed at the beginning and put straight into the pot. when it is cooked, then rinsed and drained 3 times.

    doing it this way, it is easier than having to wash the spinach before cooking?

    is it a korean style of spinach preparation?

  • Yes, that is the way of handling some vegetables for me, but there is no strict rule for everybody. : )

  • I would wash the spinach before hand to get all the dirt out......but that just me....cos dirt can still be trap in those leaves after they are cook and rinse....:)

    But I like Spinach prep this way......

  • I usually eat it right after making it. If you have some leftover, keep it in the fridge and try to finish eating in a day.

  • You can cook beansprouts, potatoes, cabbages, radish leaves, kosari, sweet potato stems,mushrooms, and some other edible mountain vegetales. : )
