If I can give you some advice for competing it would be to attend a KCBS judging class or go to one of the top guys cocking class for about $250-500. Don't go in blind it will be a waste of money if you don't know what they are looking for or how to present it....go for it and good luck!
I too have a smoker from East Texas Smoker Company! I love it and I got 11th overall in the Mesquite NV contest that you saw on Pitmasters first show on TLC.

I am still learning and enjoying the process. I will probably enter a contest here in Texas this year. You can't beat the flavor of slow smoked meat.
