Can you tell me the individual amounts of each ingredient for the paste? Usually when I make green curry I only use about 5 ingredients but I'd really like to try this recipe :)
I am very intrigued by the way the Thai cook there food.This will take me many days to get the right ingredients and cooking style correct.If i follow your directions i will surely make a meal that tastes 1/10 of what you would make while u dont even try and because of this i am impressed with your cooking skill.In Australia this will be difficult to get the ingredients i will have to visit many asian food stores thank you for the challenge

the best cooking presentations. this dish reminds me when i was in Chiangmai and the music so calming. my father grow some herbs on his long stretch of hill and we have many pea and apple eggplants. i dont use many pea eggplant coz its quite bitter. Wild ginger hard to find here and also palm sugar. substituting with local young ginger and coconut sugar will atleast complete my green curry cooking. i tried this proper recipies and method of cookings thus wow my family. @jleer1 if you cant find an online supplier, than use frozen peas. add them just before serving. the taste and texture might be slightly off but still acceptable.... as for palm sugar... mmm... i guess you could say it on every agriculture produce ;-) ithe production of palm sugar does not endanger the wildlife the trees are harvested for the sap, much like rubber trees....
@jleer1 I make curry all the time at home, I used palm sugar at first, but changed to plain white sugar because I honestly did not like the taste of the palm sugar.
I buy a Thai brand curry paste, so much easier! But if you want the full effect you must do this.
I brown the chicken first and set it aside instead of boiling it like here. My method is more of a stir fry than a stew such as this. Still good either way.

You didn't include any measurements! Can you please tell how much of each ingredient to use in both the paste and the curry (if I were to make an entirely vegetarian curry).
Good video. It's frustrating that there are quite a lot of variations in the curry paste recipes and also the recipe for the rest of the curry in both cook books and online recipes. I bought a book called complete thai cooking which has a different green curry paste recipe to the one in this video. Anyone know where the real authetic recipe may be found?
g2theross, no need to get frustrated ;-) There are even variation in Thailand between different provinces and among different households. The one i provide here is a darn good one, and as authentic as you can get. but you are welcome to experiment and adopt the version that suits your palate.

I use TVP (textured vegetable protein) instead of chicken, and I also add oyster mushrooms, young coconut and sweet green peppers (พริกหยวก). Fresh 'krachai' is often hard to find here in Canada. no i don't, the Thai basil lifts the dish and added just before servings. you will find slight variation of the green paste between different provinces in Thailand, but in non fresh basil leafs are used in the curry paste.
I see that you are in the US. Every Asian market now have almost all the ingredients to cook proper Thai food. and you can also order it online from selected importers.

If you eat fish, than green curry with fish balls is a common Thai variety of the dish. in Thailand we use knifefish meat mixed with ground white pepper and bit of salt. Also popular is green curry with shrimp.
Tofu will not hold the consistency and texture....
You can get commercial soy beans protein preparations and try this as an option, and if all does not work, simply discard the chicken and add baby corn for color and texture...

I would like to see your recipe for red Thai curry with chicken. I made some Japanese curry and it was awful. Nothing compared to the coconut milk and Thai curry paste recipe. Just my opinion. Thai curry is much better.
Wild ginger has a milder flavor than ginger. it is widely used in Thai curries. also known as Fingerroot (Boesenbergia rotunda), or Chinese ginger, In Thai it is called krachai (Thai: กระชาย). In the west it is usually found pickled or frozen.

I like Thai curry better than Indian curry.

It's amazing how easy yet delicious this dish is. I like to add some green beans and cook the chicken in a little bit of stock beforehand.

I'm Cambodian and we eat this dish also. I absolutely love it. My favorite part is the pea eggplants. Bitter in a good way =)
I would like to see your recipe for red Thai curry with chicken. I made some Japanese curry and it was awful. Nothing compared to the coconut milk and Thai curry paste recipe. Just my opinion. Thai curry is much better.

Wild ginger has a milder flavor than ginger. it is widely used in Thai curries. also known as Fingerroot (Boesenbergia rotunda), or Chinese ginger, In Thai it is called krachai (Thai: กระชาย). In the west it is usually found pickled or frozen.
