I want to make chicken biryani, but unfortunately dont have a gas, we only have a Hot plate. The thing with hot plates is that they dont become cold as soon as you switch them off. So how to manage the cooking on low heat right after we have high heat.

(2) If I check the biryani at the end of 20 minutes and it isn't cooked, should I reseal with dough and continue cooking or could I just cook it for longer with the lid closed?
You can use any brand of garam masala as per your taste. Also, if the biryani isn't cooked after 20 minutes, you can reseal it and cook for a longer time till it gets cooked. Do let us know how it turned out to be.

Hello Chef! The biryani looks delicious but in the video it looks like you used more than 1.5 cups of rice. Is it just my imagination? Also, if I want to double the recipe, how long and at what temperature should I cook the biryani if I want to put it in the oven instead of stove top?

My dissents: Quality Chicken Biryani with the top taste and texture is not burnt on the bottom it is cooked evenly around. However you are not cooking Quality Chicken Biryani you are cooking Authentic Biryani as of which you spoke about (Soldiers during the War). @ajuba13 - not sure what kind of onions are used, but you can buy this packaged for about $3 at an Indian grocery store. It's labeled as gourmet crispy "Fried Onion," (Chirag brand) but don't by it online (its $14 online!!)

You can try the recipe of 'Gosht Biryani' and 'Kachche Gosht ki Biryani' under the recipes section on the website. Also, muslin cloth is 'mulmul ka kapda' in Hindi, which is easily available at any cloth store.

Dear Harpal, Thank you for the authentic recipe. One important questions though. What is the hyderabadi Garam Masala made of? I ask this because there are various Garam Masalas with different combinations and quantities of spices. If we don't use the correct hyderabadi garam masala, the outcome might not be as expected.

Dear Sanjeevkapoorkhazana, I am a little late in expressing my gratitude for this recipe. I'm a 30 yr old seafarer with a flair for cooking. I first tried this about a month ago ... & there has been no looking back since! I've made this Biryani almost 6 times now & it keeps turning out awesome! hey sanjeev..i made this yesterday..i dint hv saffron,so i mixed a bit of turmeric powder in milk and the color came out superb...also there was no difference in the taste...loved the biriyani ane aroma while cooking was so tempting....thank u...hugs..
Perfect.. I compared warewa.com biryani with this both are equally good.. only what i did like that you added sahi jira and garama masala stuff in boiling water.
Only concern is cooking the chicken.Since it is Kacchi Biryani proper pot needs to be used to get chicken cooked within 15 minutes.

hello singh gee.....your recipy is quite different i have ever seen...i am wonder that how can chicken is cooked in 10 to 15 minutes...anyway i liked the way you prepared the dish...so that i have decided to try it....there is some confusion about the heat level .... should it be high , medium or low after sealing the pod for dum..???
if the quantity is double as in this video, how much will be the cooking time, is it double as the quantity, or is it same time irrespective of quantity.

Great recipe! I love that you can do so many different versions of biryani! by changing the method (kuchi vs the regular), meat, spices. I completely agree with you that boned meat is much better. Not sure why restaurants in the USA insist on making boneless biryani. Without bones, it loses its flavor! Thanks again for sharing. I'll try this recipe:)

@sanjeevkapoorkhazana exactly!! brown onions are essential for this and one type of quorma and Aloo Gosht. I sometimes buy prebrowned ones from the grocery store, typically on an emergency basis. day to day cooking i always brown them myself!

The biryani tastes best when made on the cooking range. However you can seal the vessel with the dough and put it in oven at 180degree centigrades for 15 minutes.
i tried this recipe yesterday , and belive me the biryani came out so well , delicious and so aromatic the timing given for the recipe was perfect , and everybody loved it from the bottom of the heart , thank you for sharing this miracle. want to have tips on grilled fish now .
This does seem pretty easy but I'm afraid that the chicken wont be thoroughly cooked. I tried a recipe like this and the chicken turned out not fully cooked. The best method I've tried is cooking the chicken with ingredients until its over 1/2 cooked and than layering it with the 3/4 cooked rice for about 15mins.
I will give this method another try and see how it goes. Thank very much for sharing your recipe. Looking for to many more recipes from you.

hey sanjeev..i made this yesterday..i dint hv saffron,so i mixed a bit of turmeric powder in milk and the color came out superb...also there was no difference in the taste...loved the biriyani ane aroma while cooking was so tempting....thank u...hugs..

Perfect.. I compared warewa.com biryani with this both are equally good.. only what i did like that you added sahi jira and garama masala stuff in boiling water.
Only concern is cooking the chicken.Since it is Kacchi Biryani proper pot needs to be used to get chicken cooked within 15 minutes.

hello singh gee.....your recipy is quite different i have ever seen...i am wonder that how can chicken is cooked in 10 to 15 minutes...anyway i liked the way you prepared the dish...so that i have decided to try it....there is some confusion about the heat level .... should it be high , medium or low after sealing the pod for dum..???

Chef do i need to double all the ingredients if i want to make the biryani of double the chicken & rice? Also wanted to know if the time taken for cooking would be the same or more. I am going to try cooking in a dutch oven pot on the gas stove. please advice.

The quantity of whole masalas should not be doubled. If the recipe specifies use 4 cloves, you can use 6 cloves for double recipe.

Great recipe! I love that you can do so many different versions of biryani! by changing the method (kuchi vs the regular), meat, spices. I completely agree with you that boned meat is much better. Not sure why restaurants in the USA insist on making boneless biryani. Without bones, it loses its flavor! Thanks again for sharing. I'll try this recipe:)

Slice the onions finely and fry them till brow. There is no substitute for brown onions in the biryani recipe.

@sanjeevkapoorkhazana exactly!! brown onions are essential for this and one type of quorma and Aloo Gosht. I sometimes buy prebrowned ones from the grocery store, typically on an emergency basis. day to day cooking i always brown them myself!

You can sprinkle red chilli powder from top. Or add slit green chillies to the rice.

The biryani tastes best when made on the cooking range. However you can seal the vessel with the dough and put it in oven at 180degree centigrades for 15 minutes.

This does seem pretty easy but I'm afraid that the chicken wont be thoroughly cooked. I tried a recipe like this and the chicken turned out not fully cooked. The best method I've tried is cooking the chicken with ingredients until its over 1/2 cooked and than layering it with the 3/4 cooked rice for about 15mins.
I will give this method another try and see how it goes. Thank very much for sharing your recipe. Looking for to many more recipes from you.

Chicken does not take much time to cook. It will get cooked by the time the rice gets cooked.

I am a first time cook, with Italian wife who loves to cook Indian. Tried this dish, followed everything carefully; came out fantastic. Very handy, especially for foreigners, the idea of covering the spices in a muslin cloth so that they are not "eaten". Now encouraged, going for Chicken Tikka Masala and Butter Chicken. Pork Biryani is the best. Pork and rice have been an essential part of "eastern food". Arrival of religions from the Arabian areas banned pork and yet all of china and south east asia always has pork with rice. Next time try pork biryani!
