i make dahi vada ,but did not knew that it freezes well.....how to deforst the vada's?please let me know am having guest for the new year party...and i saw your video in the right time...thanks in advance
@aarushireddy : It freezes beautifully! To defrost, defrost in the fridge or on the counter-top. Once fully defrosted and ready to use, place them in very hot, salted water, allow them to soak for 5 min. Take them out, squeeze the water (be careful not to burn your hands) and place them in the dish. Pour seasoned yogurt and allow them to chill before serving.
Usually when I make dahi vada my own style, the vada's turn out hard and the taste does not sink into them; so therefore I followed your recipe...and the vada's are not as hard as mine used to turn out, but they were still not as soft as they should be and the taste had not sunk in, do you think i should add a pinch of baking soda? or any other tips you'll can provide me with maybe?
We have never had to use baking soda. Usually, if you beat the batter with your hands until it is light and fluffy, the vadas come out soft. Also, the soaking in water part also helps them become soft.
to make a hole in wada one easy method take small bowl put a wet cloth on it put some batter make hands wet and make hole it is very easy to make hole and fast too
Also i forgot to say that the daal shouldnt be coarse but it should grinded as a fine paste.
making your Daal coarse will only cause it to become hard , whereas if you grind the daal where it will become a fine paste it will make it soft and spongy which is how dahi vada should be.

Hetal, Anuja, Great recipe! Loved it as I do always all your other recipes. Where can I find the particular vessel in which you fried the vadas? I live in Tampa, Fl and there are quite a few good Indian grocery stores, but I need a specific name for the kind of vessel you have used to do some research before I find the place where I can buy this. Thanks!
if you soak the wadas in luke warm water, it makes the wadas softer. you can squeez out the water and keep them ready a day before in the fridge, add yogurt on the day you want to serve
amezing demonstraion guys thanx alot, but I have a Question can I add chana nakhod to that since I was one time in India and I belive I ate it with chanh as well. plz let me know thanx and best of luck.
hie.. while i am new to cooking, your videos are really helpful.. i like sweet dahi vadas. can u tell me which steps specified above need to be skipped to make it sweet..
I am due to take some close family members on a picnic and I was wondering if you could recommend a variety of savouries/ food I should make that won't be too dry or soggy but very filling.
-P.S. I think your show should be on TV. Its absolutely brilliant
Hello Ladies, I want you to know that I am now totally addicted to your videos. This one for dahi vada is incredible. I change one thing though. I mix all the dahi with tamarind/hari chutney and all spice and soak the vada in that. It turns out AMAZING and I cant stop eating it. Its a really fast lunch or snack and simply YUMMI. Keep them coming and I will keep watching and cooking. I am a Gauri with a Sikh who loves to eat. So, thanks a ton for keeping our relationship going!
Hi.. Thanks a ton for the recipe.. Am going to make it now and shall keep u posted on the outcome. Your instructions and recipe are simple to follow. Good job... Cheers..

It is not Dahi vada
It is Medu vada.
Dahi vada doesn't have Hole in between.

This is not the recipe for dahi vada , this is actually the recipe for MENDU VADA and it should be eaten with sambar and it is a south indian dish.
DAHI VADA is made with urad daal AND mung daal and dosen't have a hole in the middle. It should be round and flat.
NXJESSE 1 year ago
@peacelily.........you can use a flat bottom Wok

Yes, you have to serve it chilled or at least room temperature. Since it has a yogurt sauce, it cannot be heated.
