Ok, if you want to make it so that the function keys work for whatever you're trying to do go to system preferences. Once there, go to the "Keyboard & Mouse window. After you've done that you should see the option "Use all F1, F2, etc. keys as standard function keys". Click that, and then you should have all of your function keys open. To disable this, just click the "checked" box.
I like the new keyboards better than the old ones because on the old MacBook Pros, F8, F9, F10 controls the backlighting brightness. That really annoys me because I like to use those keys for expose. If I turn off special functions, then I can't adjust volume without Fn key. I only use the show desktop and all programs functions, so the new ones would have been good. :(
I want to be able to map the keys on my keyboard in the *exact* same way as I had it on my 1st generation MacBook. No fn key to hold down - I just want to be able to use everything by only hitting 1 button. Anyone who has a way to map the keys exactly like the way it was before would raise my level of stoked for a good week =) .
You can do this by going to "Keyboard and Mouse" in System Preferences, then clicking the "Keyboard" tab, and checking the radio box for "Use all F1, F2 etc. keys as standard function keys". Then change the shortcuts to your liking under the "Keyboard Shortcuts" tab.

Yea, there's a setting in System Preferences to use the function keys as normal function keys.

Like teeangle said, you can change this in System Preferences so that special function keys revert back to F1, F2 etc.
Alternatively, pressing the "fn" key with any special function key will revert back to F1, F2 etc. Not ideal, but another possible solution.
