Nope, you can't gold stars on easy, only expert. Not to mention it clearly states "EXPERT" at the end. Also, the pitch might have been slightly off, but just so long as your cursor thingymabob is touching the green or yellow line, it will still count. Rock Band is far from a game of precision.
