For all the idiots talking about water's boiling point, it depends on where you are in the world. The higher your elevation the lower the boiling point. Not that any of that matters because when he says "boil" the water what he means is heat the water up till its 195F, but as you're heating it you will hear it "boiling" because the water directly in contact with the pan will be significantly hotter.
