Cameron explained this scene's exclusion by the statement "it was too cute for the situation."

For historical reasons, this scene should've never been even considered. Mrs. Brown (who wasn't even called Molly until after her death) was in her cabin during the collision and not in the Palm Court (which I doubt was even open that late at night).

They probably did not use this scene because the whereabouts of Margaret Brown are historically covered: She was in her cabin at the time of the impact an read a book. So depicting her in the palm court asking for ice would be artistic license.

She said, that an absurd, can it be anything more unnecessary to do for a lady. Of next deleted scene you see her rowing lifeboat along with Molly Brown. :)
