  • HOLY MOLEY....I just made collards for the first time EVER using this recipe and BAM...blew the ladies at work away...we're talking southern SC ladies...this made the absolute best collards that I have ever had the pleasure of consuming. Love your videos.

  • Aunt Inez (great aunt old school) used ham hocks, bacon fat, garlic, red peppers (not too many) and skipped that "drying process". She like to use "mixed greens" which was the bomb: kale, mustard greens, collard greens, turnip greens, all fresh from her garden that I grew for her.

  • @DocB3Fuzz That's exactly how we cook them in East Texas (also add sugar)..and we've competed and won in the Collard Green Festival for the past four years.

  • Isaac is a doll! LOL A budding food critic. And you're right it's very important to get all the grit off fresh collards. Collards are not typically a get-off-work-and-put-them-on type food because you can't rush them. They do take a couple hours, but they are well worth it for the weekend!

  • heres a trick, after wetting the leaves thoroughly, i put it flat against a cutting board and scrub a few times with a corn brush. collard greens is too tough uncooked to be torn up by a corn brush, but will loosen ALL the grit and grime. one more rinse and its good.

  • @Kemster79 that's funny in Spain in Galicia they have a soup made out of greens called ACELGA. many times the Cubans use the Chinese Bok Choy, it looks exactly like the collards except the stem and bottom of veggie is white and the leaves green. The Yoruba Lukumi religion makes this dish called OCHINCHIN for the goddess of love OSHUN who's my guardian angel and we use BOK CHOY. some folks use WATERCRESS others use SPINACH..I KNOW YOU GOT THEM IN ENGLAND..LOL

  • Tried your recipe this afternoon. PERFECT, as Judge Judy would say. I am an American living in Canada, and nobody I know cooks the Southern Way, except for my Mother from Alabama. Thought it was time I tried.....and let me tellya Chick.......these greens were TALKIN'.

  • being from louisiana, you'd think i would have had tried to make this by now (i'm 27!) i have always been intimidated by the long process of cooking collard greens, but after watching your video-4 times over the course of a month-i went for it. i even washed each leaf individually! and wow, they turned out amazing. thank you for teaching this southern gal how to cook AMAZING collard greens!

  • You can just leave them out. They will still be delish. I sometimes just make them with just the chicken broth and red pepper and they still come out great.

  • You know, I've never used olive oil and onion and garlic... or even tried it like that. Us old folks still use smoked ham hock simmered for about 3 hours and then goes in your collards, Some salt and a dash of vinegar and that's it. I have a patch of collards that produce all winter and some mustards.

    I wouldn't mind trying it fancy and northern city style like this every once in a while but I am shocked at how much that olive oil costs.

  • I was told today by a southern black woman (I'm white lol) that smoked turkey legs are better/healthier than smoked ham hocks, and I tried them with your recipe, FABULOUS!!! I still cut the stems with the knife though...LoL! Great video, reminds me alot of how my 2 1/2 year old is when I'm tryin to cook!
