  • You rock Kai. Watching your recipes made me buy a wok. I now cook for myself using the wok and I can tell you it's much better than the food I ate before. I eat now alot of vegetables, when before I didn't, because they're more tasty now! Yummy!

  • in Thailand we called "Sen Chan" (เส้นจันทน์). i guess it maybe well known as Phnom Penh Noodles.

    i you have banana blossom. you can eat raw inner banana blossom with it, too. it's astringent but can reduce oily.

  • For what I have seen, Pad thai also includes tofu. The sauce for the pad thai isnt supposed to be prepared separatey and then later added to the noddles? The sugar isnt supposed to be palm sugar? And the eggs?

  • I usually buy fish sauce in any thai or filipino market and noodles were soaked in warm water its in the description

  • absolutely, fish sauce is the staple of viet cousine. you will not have any problem finding it at all but in viet its nước mắm

    1-2 tbsp of fish sauce too. D'oh!

    I've been making my phat sauce like this:

    1 tbsp soy sauce

    1 tbsp oyster sauce

    1 tbsp vinager

    1-2 tbsp tamarind

    2-3 tbsp sugar

    and 1 tbsp fine ground red chilie powder for red color.

    I add the sauce to the noodles right after I add the noodles to the Wok.
