what sort of noodle are you soking ? rice noodles ? and do you have to soke them or can u boil them .. or would that just make them fall apart into little bits ?
For what I have seen, Pad thai also includes tofu. The sauce for the pad thai isnt supposed to be prepared separatey and then later added to the noddles? The sugar isnt supposed to be palm sugar? And the eggs?

in Thailand we called "Sen Chan" (เส้นจันทน์). i guess it maybe well known as Phnom Penh Noodles.
i you have banana blossom. you can eat raw inner banana blossom with it, too. it's astringent but can reduce oily.

I usually buy fish sauce in any thai or filipino market and noodles were soaked in warm water its in the description

Ah! You show how to make a version of the sauce this time....
I've been making my phat sauce like this:
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp vinager
1-2 tbsp tamarind
2-3 tbsp sugar
and 1 tbsp fine ground red chilie powder for red color.
I add the sauce to the noodles right after I add the noodles to the Wok.
