Just built my first batch. No pectic enzyme though. If it looks cloudy after primary fermentation, I might add as I "top up" carboy, on secondary. I love Niagra wine, and Welches uses Diamond, and Niagra grapes in that particular concentrate.

But I was wondering.. Did you also sanitize the cat on your counter too before making the wine? :)
