  • I came from Pangasinan now ling in US. There are variations on how to cook igado. The main ingredient though is liver(higado in Spanish)I like to add tripe aside from pork and liver. The trick is to tenderize the tripe first. The liver will be the last to be cooked. If you overcook the liver it gets harder(parang suelas ng sapatos he he he) Of course you need red bell pepper, sweet green peas etc.

  • ingredients: garlic(minced),onion(chopped),­ground pork,pork intestine(cleaned and pre-cooked),pork liver(cut),carrots(chopped),so­y sauce,knorr pork cubes,a little bit of sugar, raisins(optional),water,ground pepper..

  • Saute all the first 5 ingredients,add ground pepper,carrots,soy sauce,water..simmer and taste. If hindi pa malasa,add the knorr pork cube and sugar..simmer until the intestines are done. Add the raisins, simmer.. then done! Kaw na bahala sa taste, manamisnamis or tama lang :) Goodluck!
