Thank you so much for this tutorial!! So helpful! I made roses years ago but had forgotten how to get started. One thing I used to do when I was first learning to make roses was to use wax paper and place a square of it on the nail (using a dot of icing to hold it in place) so I could make the flower on that. When my flower was done, I would remove the paper (and flower) from the nail then freeze it; When the rose was frozen, I would remove it from the paper and then place it on the cake.

I love your videos you are brilliant, however I just can't get my rose to work!! I can't get it off the flower nail for one thing, it just falls to pieces when I take it off with the scissors, and also while I'm piping the petals the butercream is just flopping over and not staying firm, if I make the icing stiffer it doesn't come out the bag very well, it breaks as it comes out.

Please specify to me the exact quantities of icing sugar and butter to be added, because I tried making butter cream icing by guessing the measures and landed up with a limp butter cream batter. Do we need to add shortening too? Please tell me.
